This week on the blog, we chat to Neo, Echo member and co-founder of Greek street food start-up, The Athenian.

Since coming on an Echo++ accelerator programme back in 2015, Neo and his co-founder Tim have scaled to two permanent sites and three markets in London, and their first site in Bristol. And we can vouch for the fact that their souvlaki really is the best in town!


What inspired you to start your business?

The Athenian emerged from our disappointment with the representation of the Greek cuisine in London and the ongoing search for lovingly-made, mouth-watering souvlaki! Luckily, Euthymios (Tim) nailed the food part and it became our mission to bring the best souvlaki to as many people as possible!

Where was your business at before joining the Echo++ programme?

We started Echo++ a few months after we started The Athenian. Prior to starting the business, I worked in finance and Euthymios has a background in sound engineering.

Two years on, what’s your focus now?

Our focus is to bring our food to us many people as possible while staying true to our mission and values.

What’s the most interesting things you’ve traded on Echo so far?

We earned Echoes by offering a day shadowing us at The Athenian for an aspiring street food vendor. The most useful thing we received was a one-to-one meeting with Pratap, chef and co-founder of Hungry chef, at the early stages of our business journey.

What advice would you give to a new business starting out?

Find something you believe in it and go for it! Test your idea, listen to your client, refine the product and keep going while staying true to your mission. Execution is as important as the actual product/service itself.

What have been real ‘light bulb’ moments for you during your business journey?

To grow, you have to hire the best people, “let go” and let them grow as the business grows.
